1 pound fresh asparagus, trimmed and chopped

1 medium onion, diced

2 cloves garlic, minced

2 tablespoons olive oil

4 cups vegetable broth

1 medium potato, peeled and diced

1 cup heavy cream (or coconut cream for a vegan option)

Salt and pepper to taste

1 teaspoon lemon zest

Optional garnish: Croutons and a sprinkle of fresh chives

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the chopped asparagus and diced potato to the pot, stirring well to combine.

        Pour in the vegetable broth, and bring to a boil. Reduce the heat and let it simmer for about 15-20 minutes, or until the asparagus and potatoes are tender.

          Remove the pot from heat and let it cool slightly. Use an immersion blender or a regular blender to puree the soup until smooth.

            Once blended, return the soup to the pot. Stir in the heavy cream and lemon zest, and heat gently over low heat until warmed through. Season with salt and pepper to taste.

              Serve the soup hot, garnished with croutons and fresh chives if desired.
