1 pound fresh asparagus, trimmed and cut into 1-inch pieces

1 medium onion, chopped

2 cloves garlic, minced

1 medium potato, peeled and diced

4 cups vegetable broth

1 cup heavy cream

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon lemon juice

Fresh chives or parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 4-5 minutes.

    Add the minced garlic and sauté for an additional minute until fragrant.

      Stir in the diced potato and asparagus pieces, cooking for another 3-4 minutes.

        Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 15-20 minutes, or until the asparagus and potato are tender.

          Once cooked, use an immersion blender to puree the soup until smooth. You can also carefully transfer to a blender in batches if needed.

            Return the soup to the pot (if using a blender) and stir in the heavy cream. Heat over low until warmed through.

              Add lemon juice, and season with salt and pepper to taste.

                Serve hot, garnished with fresh chives or parsley on top.
