1/2 cup whole wheat flour

1/2 cup mixed seeds (sunflower, pumpkin, sesame, flax)

1/4 cup olive oil

1/2 teaspoon salt

1 teaspoon baking powder

1 tablespoon honey (or maple syrup for a vegan option)

1/4 cup water (plus more if needed)

Fresh herbs (rosemary or thyme), finely chopped (optional for added flavor)

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the all-purpose flour, whole wheat flour, mixed seeds, salt, and baking powder. Whisk together until evenly mixed.

      Add the olive oil and honey (or maple syrup) to the dry ingredients, then mix using your hands or a fork until crumbly.

        Gradually add the water, one tablespoon at a time, mixing until the dough comes together. If the dough is too dry, add a little more water until it is malleable but not sticky.

          If you're using fresh herbs, fold them into the dough at this stage.

            Lightly flour a clean surface and roll out the dough to about 1/8 inch thick. Cut the dough into squares or desired shapes using a knife or cookie cutter.

              Place the cutouts on the prepared baking sheet, ensuring they are spaced a bit apart as they will expand slightly during baking.

                Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the crackers are crisp.
