1 cup cottage cheese

1 cup all-purpose flour

1/2 cup milk

3 large eggs

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 tablespoons melted butter (plus more for cooking)

1 teaspoon vanilla extract

Optional toppings: Fresh berries, honey, maple syrup, or yogurt

Instructions
 

In a large mixing bowl, combine the cottage cheese, eggs, milk, melted butter, and vanilla extract. Whisk together until smooth.

    In a separate bowl, sift together the flour, sugar, baking powder, baking soda, and salt.

      Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to over-mix; a few lumps are okay.

        Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter.

          Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes or until bubbles appear on the surface and the edges look set.

            Flip the pancakes and cook for an additional 2-3 minutes or until golden brown and fluffy.

              Remove from the skillet and keep warm while you repeat the process with the remaining batter.

                Serve the pancakes warm with your choice of toppings such as fresh berries, drizzled honey, maple syrup, or yogurt.
