1 cup creamy peanut butter

1 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

1/4 cup chopped roasted peanuts (for added crunch)

Instructions
 

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the creamy peanut butter and brown sugar, mixing until smooth and well blended.

      Add the egg and vanilla extract to the peanut butter mixture, mixing until fully incorporated.

        Sprinkle the baking soda and salt into the bowl and blend until just combined.

          If desired, fold in the chocolate chips and chopped roasted peanuts for extra texture and flavor.

            Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.

              Using a fork, gently press down on each cookie to create a crisscross pattern on top.
