Ingredients

2 ½ cups sweetened shredded coconut

¾ cup sweetened condensed milk

1 teaspoon vanilla extract

½ teaspoon almond extract

2 large egg whites

¼ teaspoon salt

½ cup dark chocolate chips (for dipping)

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper for easy clean-up.

Mix the Coconut Mixture: In a large bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and almond extract. Stir until fully combined and the coconut is well-coated.

Beat the Egg Whites: In another bowl, whip the egg whites and salt together using an electric mixer on medium speed until soft peaks form (about 3-4 minutes). The egg whites should be frothy and hold their shape slightly when you lift the beaters.

Fold the Mixtures: Gently fold the beaten egg whites into the coconut mixture using a spatula. Work carefully to maintain the airy texture of the egg whites. The combined mixture should be soft but hold together.

Shape the Macaroons: Using a tablespoon or a small cookie scoop, scoop rounded heaps of the mixture onto the prepared baking sheet, leaving about 1 inch of space between each mound.

Bake: Bake in the preheated oven for 18-20 minutes or until the edges are golden brown and the tops are slightly toasted.

Cool: Remove from the oven and allow the macaroons to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Chocolate Drizzle: While the macaroons are cooling, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.

Dip or Drizzle: Once cooled, dip the bottoms of each macaroon into the melted chocolate or drizzle the chocolate over the cooled macaroons for added sweetness and decoration.

Set: Place them back on the wire rack to allow the chocolate to set before serving.

Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 15 macaroons

                        - Serving Suggestions: Serve the macaroons on a vibrant platter, drizzled with extra chocolate and topped with a sprinkle of toasted coconut for an extra tropical touch!
