3 cups sweetened shredded coconut

1 cup sweetened condensed milk

1 teaspoon pure vanilla extract

2 large egg whites

1/4 teaspoon salt

1/2 cup semi-sweet chocolate chips (optional)

Cooking spray or parchment paper for baking

Instructions
 

Preheat your oven to 325°F (160°C). If using a baking sheet, line it with parchment paper or spray with cooking spray.

    In a large mixing bowl, combine the sweetened shredded coconut and sweetened condensed milk. Stir until well mixed.

      Add the vanilla extract and mix until fully incorporated.

        In a separate bowl, whip the egg whites and salt using an electric mixer until stiff peaks form. This means that when you pull the beaters out, the egg whites should hold their shape and not fall back into the bowl.

          Gently fold the whipped egg whites into the coconut mixture, being careful not to deflate the egg whites. Mix until just combined.

            Use a spoon or a cookie scoop to portion out the mixture onto the prepared baking sheet, forming small mounds about 1-2 inches apart.

              If desired, gently press a few chocolate chips into the top of each mound for added flavor.

                Bake the macaroons in the preheated oven for 18-20 minutes or until the tops are golden brown.

                  Once done, remove from the oven and allow to cool on the baking sheet for about 10 minutes before transferring to a wire rack to cool completely.
