1 lb (450g) white fish fillets (e.g., cod or tilapia), cut into bite-sized pieces

1 can (14 oz) coconut milk

2 tablespoons red curry paste

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

1 red bell pepper, sliced

1 cup snap peas or green beans

Juice and zest of 2 limes

1 tablespoon fish sauce

Salt to taste

Fresh cilantro for garnish

In a large pan or skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent (about 5 minutes).

    Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

      Add the red curry paste to the pan and cook for 2-3 minutes, stirring frequently to enhance the flavors.

        Pour in the coconut milk, making sure to mix it well with the curry paste.

          Bring the mixture to a gentle simmer, then add the lime juice, lime zest, and fish sauce. Season with salt as desired.
