1 cup jasmine rice

1 ½ cups chicken broth

2 boneless, skinless chicken thighs, chopped

1 cup shiitake mushrooms, sliced

1 small onion, diced

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

1 teaspoon ginger, grated

2 tablespoons green onions, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Rinse the jasmine rice under cold water until the water runs clear. This helps to wash away excess starch.

    In a medium bowl, combine the chopped chicken thighs with soy sauce, oyster sauce, sesame oil, ginger, salt, and pepper. Let it marinate for about 15 minutes.

      Heat a large clay pot or a heavy-bottomed pot over medium heat. Add a splash of oil and sauté the diced onion and minced garlic until fragrant and translucent.

        Add the marinated chicken mixture into the pot, cooking until the chicken is browned on all sides (about 5-7 minutes).

          Stir in the sliced shiitake mushrooms and sauté for another 3 minutes until they soften.

            Add the rinsed rice to the pot, stirring everything to combine evenly.

              Pour the chicken broth into the pot, ensuring the rice is completely submerged. Bring to a gentle boil.

                Once it reaches boiling point, cover the pot with a lid, reduce the heat to low, and let it simmer for about 25-30 minutes. Avoid lifting the lid during this time to keep the steam intact.

                  After the cooking time, remove the pot from the heat and let it sit, covered, for an additional 10 minutes to allow the rice to absorb any remaining moisture.

                    Fluff the rice gently with a fork, and garnish with chopped green onions before serving.
