Cinnamon Sugar Pretzels

Ingredients
  

1 1/2 cups warm water (110°F to 115°F)

2 teaspoons active dry yeast

3 tablespoons granulated sugar

1 teaspoon salt

4 cups all-purpose flour

1/4 cup baking soda

1 large egg (for egg wash)

1 tablespoon water (for egg wash)

1/2 cup unsalted butter, melted

1 cup granulated sugar (for coating)

2 tablespoons ground cinnamon

Instructions
 

In a large mixing bowl, combine warm water, yeast, and 3 tablespoons of sugar. Allow it to sit for about 5 minutes until foamy.

    Add the salt and flour to the yeast mixture. Mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

      Place the dough in a lightly greased bowl, cover it with a kitchen towel, and allow it to rise in a warm place for 1 hour or until it's doubled in size.

        Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper.

          In a large pot, bring 10 cups of water and the baking soda to a gentle boil.

            Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a long rope, about 18 inches long. Form each rope into a pretzel shape.

              Carefully drop each pretzel into the boiling soda water for about 30 seconds, then use a slotted spoon to remove them and place them on the prepared baking sheets.

                In a small bowl, whisk together the egg and 1 tablespoon of water. Brush each pretzel with the egg wash.

                  In another bowl, combine the sugar and cinnamon. Sprinkle the mixture generously over each pretzel.

                    Bake the pretzels in the preheated oven for 12-15 minutes, or until golden brown. Remove from the oven and brush with melted butter while still warm.

                      Allow them to cool slightly before serving.
