1 cup quinoa, rinsed

2 cups water or apple juice

1 large apple, chopped (preferably a sweet variety like Honeycrisp)

1 teaspoon ground cinnamon

1 tablespoon maple syrup or honey

1/4 cup chopped walnuts or pecans (optional)

1/4 cup dried cranberries or raisins (optional)

Pinch of salt

Fresh apple slices for garnish (optional)

Instructions
 

In a medium saucepan, combine the rinsed quinoa and water (or apple juice) and a pinch of salt. Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to low, cover with a lid, and simmer for about 15 minutes, or until the quinoa has absorbed all the liquid.

      Remove the saucepan from the heat and let it sit covered for an additional 5 minutes. This helps the quinoa become fluffy.

        Meanwhile, in a large bowl, combine the chopped apple, ground cinnamon, and maple syrup (or honey). Stir well to coat the apple pieces evenly.

          Fluff the quinoa with a fork and fold it into the apple mixture until well combined.

            If using, stir in the chopped nuts and dried cranberries or raisins for added texture and sweetness.

              Serve warm, garnished with fresh apple slices on top if desired.
