1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ teaspoon ground cinnamon

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk

½ cup sugar (for topping)

1 tablespoon ground cinnamon (for topping)

Whipped cream (optional, for serving)

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

    In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

      In another large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3 minutes.

        Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.

          Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Begin and end with the dry ingredients, mixing gently until just combined.

            Fill each cupcake liner about ⅔ full with batter.

              Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

                While the cupcakes are baking, prepare the topping by mixing ½ cup of sugar with 1 tablespoon of ground cinnamon in a small bowl.

                  Once the cupcakes are done, remove them from the oven and let them cool in the pan for about 5 minutes. Then, transfer the cupcakes to a wire rack to cool completely.

                    Once cooled, brush the tops of the cupcakes with melted butter and dip them in the cinnamon-sugar mixture to coat.

                      Serve the churro cupcakes warm, optionally topped with a dollop of whipped cream.
