1 cup granulated sugar

½ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup extra virgin olive oil

1 cup whole milk (or plant-based milk for a vegan option)

3 large eggs (or 3 flax eggs for a vegan option)

1 tablespoon vanilla extract

½ cup semisweet chocolate chips

Zest of 1 orange (optional for a citrus twist)

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and dust it with flour or line it with parchment paper for easy release.

    In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.

      In another bowl, combine the olive oil, milk, eggs (or flax eggs), and vanilla extract. Whisk until the mixture is smooth and well blended.

        Gradually pour the wet ingredients into the dry ingredients, stirring gently with a spatula until just combined. Avoid overmixing.
