1 lb shrimp, peeled and deveined

2 tablespoons chipotle powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper to taste

1 cup quinoa, rinsed and cooked

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1/2 cup Greek yogurt (or sour cream)

Optional toppings: pickled red onions, crumbled feta, additional lime wedges

Instructions
 

In a bowl, combine shrimp, chipotle powder, cumin, smoked paprika, olive oil, salt, and pepper. Mix well, ensuring all shrimp are coated with the spices. Let marinate for 15 minutes while preparing other ingredients.

    Cook the quinoa according to package instructions and set aside.

      In a large skillet over medium-high heat, add the marinated shrimp. Cook for 2-3 minutes on each side or until the shrimp are pink and opaque. Remove from heat.

        In a serving bowl, layer the cooked quinoa as the base. Add black beans, corn, cherry tomatoes, avocado, and cooked shrimp on top.

          Squeeze fresh lime juice over the entire bowl and drizzle with Greek yogurt.

            Garnish with chopped cilantro and any other optional toppings you desire.
