1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

2 tablespoons chipotle ranch seasoning (store-bought or homemade)

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 medium red onion, diced

1 red bell pepper, diced

1 cup shredded cheddar cheese

1 ripe avocado, sliced

1 cup romaine lettuce, shredded

4 large flour tortillas

Sour cream and salsa, for serving

Prepare the Chicken: In a bowl, combine the olive oil and chipotle ranch seasoning. Add the chicken breasts, ensuring they are well-coated. Allow them to marinate for at least 30 minutes (or up to 2 hours in the fridge for more intense flavor).

    Cook the Chicken: Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Let it rest for 5 minutes before slicing thinly.

      Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for 5-6 minutes until softened and slightly caramelized. Add corn and stir for an additional 2 minutes.

        Assemble the Burritos: On each flour tortilla, layer a fourth of the cooked rice, black beans, sautéed vegetables, sliced chicken, avocado, shredded lettuce, and cheddar cheese.

          Fold the Burritos: Fold the sides of the tortilla over the filling, then roll the bottom up tightly. Optionally, you can grill the burritos for 1-2 minutes on each side to seal and crisp them up.

            Serve: Cut each burrito in half and serve with sour cream and salsa on the side for dipping.
