4 boneless, skinless chicken breasts

2 tablespoons olive oil

3 tablespoons fresh lime juice

Zest of 1 lime

2 tablespoons honey (or agave syrup for a vegan twist)

3 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a small bowl, whisk together olive oil, lime juice, lime zest, honey, minced garlic, chili powder, cumin, paprika, salt, and black pepper until it's well combined.

    Place the chicken breasts in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring it is thoroughly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or ideally 2-3 hours.

      Preheat your grill or skillet over medium-high heat. If using a grill, oil the grates lightly to prevent sticking.

        Remove the chicken from the marinade and let any excess drip off. Grill or cook the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has a nice char.

          Once cooked, remove the chicken from the heat and let it rest for 5 minutes before slicing. This will help keep the chicken juicy.

            Slice the chicken and serve it warm, garnished with fresh cilantro and lime wedges.
