Ingredients

2 cups cooked chicken breast, shredded

1 ripe avocado, mashed

1 cup cherry tomatoes, halved

1 small red onion, finely sliced

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

4 large whole wheat tortillas

1 cup lettuce or spinach

Optional: 1/2 cup Greek yogurt for dressing

Instructions

In a large mixing bowl, combine the shredded chicken, mashed avocado, cherry tomatoes, red onion, and cilantro.

Add lime juice, cumin, smoked paprika, salt, and pepper to the bowl. Mix everything together until well combined and flavors are evenly distributed.

Lay out each tortilla on a clean surface. Place a handful of lettuce or spinach in the center of each tortilla.

Spoon the chicken mixture onto the lettuce, making sure not to overfill the wraps.

To wrap, fold in the sides of the tortilla and then roll it from the bottom up tightly.

If using, drizzle a bit of Greek yogurt over the filling for added creaminess before wrapping.

Place the wrapped tortillas seam-side down on a plate. If desired, you can cut them in half to show off the colorful filling.
