1.5 lbs ground chicken

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/2 cup cooked ham, diced

1/4 cup fresh parsley, chopped

1 egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

For the Dijon Gravy:

1 cup chicken broth

1 tablespoon Dijon mustard

1 tablespoon cornstarch

1/4 cup milk

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, diced ham, chopped parsley, egg, minced garlic, onion powder, thyme, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix until well combined.

      Shape the mixture into a loaf and place it in a greased baking dish or on a lined baking sheet.

        Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaf is golden brown.

          While the meatloaf bakes, prepare the Dijon gravy. In a saucepan over medium heat, combine the chicken broth, Dijon mustard, and milk. In a small bowl, mix cornstarch with a bit of water to create a slurry, then add it to the saucepan. Whisk continuously until the gravy thickens, about 5-7 minutes. Season with salt and pepper to taste.

            Once the meatloaf is cooked, allow it to rest for 10 minutes before slicing.

              Serve the meatloaf slices drizzled with Dijon gravy.
