2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup brown rice or quinoa

1 can black beans, drained and rinsed

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup corn (frozen or fresh)

1/2 cup fresh cilantro, chopped

Juice of 1 lime

1 cup shredded cheese (cheddar or pepper jack)

Sour cream or Greek yogurt for serving (optional)

Cook the Chicken: In a bowl, mix the olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat them well with the spice mixture.
