1/2 cup chia seeds

2 cups coconut milk (preferably unsweetened)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 ripe mango, diced

1/4 cup shredded coconut (sweetened or unsweetened)

Fresh mint leaves for garnish

Optional toppings: sliced kiwi, banana, and berries

Instructions
 

In a mixing bowl, combine the chia seeds, coconut milk, honey or maple syrup, and vanilla extract. Stir well to ensure the chia seeds are evenly distributed.

    Let the mixture sit for about 10 minutes, then stir again to prevent clumping. Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and create a gel-like consistency.

      Once the pudding has thickened, remove it from the refrigerator and stir well. If it’s too thick, you can add a splash of coconut milk to reach your desired consistency.

        To serve, spoon the chia pudding into individual bowls or glasses. Top each serving with diced mango, shredded coconut, and any other fruits of your choice like kiwi, banana, or berries.
