1 medium head of cauliflower, cut into florets

1 cup all-purpose flour

1 cup buttermilk (or dairy-free substitute)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice level)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup breadcrumbs (panko for extra crunch)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare Cauliflower: In a large bowl, toss the cauliflower florets with salt and pepper.

      Make Batter: In a separate bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, and a pinch of salt. Slowly add buttermilk until the batter is smooth.

        Coat Cauliflower: Dip each cauliflower floret into the batter, allowing excess to drip off.

          Add Breadcrumbs: Place the coated floret into the bowl with breadcrumbs and toss until fully coated. Repeat with all florets.

            Prepare for Baking: Arrange the breadcrumb-coated cauliflower on the prepared baking sheet, leaving space between each piece. Drizzle olive oil over them for added crispiness.

              Bake: Bake in the preheated oven for about 25-30 minutes, or until golden brown and crispy, flipping halfway through for even cooking.

                Garnish and Serve: Once baked, remove from the oven and let cool slightly. Sprinkle with fresh parsley before serving.
