2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

1 cup buttermilk

1 tablespoon honey (optional)

Optional: Southern-style sausage gravy for serving

Instructions
 

Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper for easy cleanup.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

        Make a well in the center of the dry ingredients. Pour in the buttermilk and honey (if using).

          Stir gently with a wooden spoon or spatula until just combined. Be careful not to over-mix; you want to keep the biscuits tender.

            Turn the dough out onto a lightly floured surface. With floured hands, gently shape the dough into a rough ball, then pat it down to about 1 inch thick.

              Using your hands, pinch off large pieces of dough (about the size of a cat’s head) and place them on the prepared baking sheet, spaced about 2 inches apart.

                Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.

                  Remove from the oven and let cool slightly before serving.
