2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon sugar

½ cup unsalted butter, cold and cubed

¾ cup buttermilk

1 egg (optional, for brushing)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk until well blended.

      Add the cold, cubed butter to the flour mixture. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.

        Make a well in the center and pour in the buttermilk. Gently stir until the dough comes together—it should be slightly sticky but manageable.

          Turn the dough out onto a floured surface, and knead gently 4-5 times until it forms a cohesive ball. Avoid over-kneading to ensure light and fluffy biscuits.

            Divide the dough into 6-8 equal portions, then gently shape each portion into a large ball (about the size of a cat's head—hence the name!).

              Place the biscuits on the prepared baking sheet, spacing them about 2 inches apart. Optionally, you can beat the egg and brush the tops of the biscuits for a nice golden color.

                Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                  Remove from the oven and let them cool for a few minutes before serving. Enjoy warm with butter, honey, or jam!
