500g carrots, peeled and sliced into thin rounds

100g unsalted butter

100g brown sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1 sheet of puff pastry (ready-rolled)

Salt, to taste

Fresh thyme leaves, for garnish (optional)

Instructions
 

Preheat your oven to 200°C (400°F).

    In a large oven-safe skillet, melt the butter over medium heat.

      Once the butter has melted, add the brown sugar, vanilla extract, cinnamon, and ground ginger. Stir until the sugar dissolves and the mixture becomes bubbly.

        Add the sliced carrots to the skillet, stirring to coat them in the caramel mixture. Cook for about 10 minutes, allowing the carrots to soften slightly and absorb the flavors.

          Season the carrots with a pinch of salt, then arrange them evenly in a circular pattern in the skillet.

            Remove the skillet from heat and carefully drape the puff pastry over the carrots, tucking the edges down around them.

              Using a fork, poke a few holes in the pastry to allow steam to escape during baking.

                Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown and puffed up.

                  Once done, remove from the oven and allow to cool for 5 minutes. Carefully invert the skillet onto a serving plate, releasing the tarte tatin.

                    Garnish with fresh thyme leaves if desired and serve warm.
