Ingredients
  

1 cup rolled oats

1 cup almond milk (or any preferred milk)

1 medium carrot, finely grated

1/4 cup Greek yogurt (or dairy-free alternative)

2 tablespoons maple syrup (or honey)

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

A pinch of salt

1/4 cup chopped walnuts (optional)

1/4 cup raisins (optional)

Topping: Shredded coconut, extra walnuts, or a dollop of Greek yogurt

Instructions
 

In a large mixing bowl, combine the rolled oats, almond milk, grated carrot, Greek yogurt, and maple syrup.

    Add in the vanilla extract, ground cinnamon, nutmeg, and a pinch of salt. Stir everything together until well combined.

      If desired, fold in the chopped walnuts and raisins for added texture and flavor.

        Divide the mixture evenly into two jars or containers with lids. Seal them tightly and refrigerate overnight (or at least for 4 hours).

          In the morning, take the jars out of the refrigerator and give them a good stir. The oats should have absorbed most of the liquid, becoming creamy in consistency.
