1 cup all-purpose flour

1/2 cup whole wheat flour

1 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

2 large eggs

1/2 cup vegetable oil

1 cup finely grated carrots (about 2 medium carrots)

1/2 cup crushed pineapple, drained

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or currants (optional)

Zest of 1 orange

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

      In a separate bowl, beat the eggs and then whisk in the vegetable oil until well blended.

        Stir in the grated carrots, crushed pineapple, orange zest, and if using, the chopped nuts and raisins. Mix until everything is well coated.

          Pour the wet ingredients into the dry mixture and gently fold until just combined. Be careful not to overmix; a few lumps are okay.

            Scoop the batter into the prepared muffin tin, filling each about 2/3 full.

              Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

                Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
