1 cup rolled oats

1 cup grated carrots (about 2 medium carrots)

1/2 cup almond or peanut butter

1/3 cup maple syrup or honey

1/4 cup shredded coconut

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 cup chopped walnuts or pecans

1/4 cup raisins or cranberries

Pinch of salt

Instructions
 

In a large mixing bowl, combine the rolled oats, grated carrots, almond butter, and maple syrup. Mix well until all the ingredients are evenly incorporated.

    Add the shredded coconut, cinnamon, nutmeg, chopped nuts, raisins or cranberries, and a pinch of salt to the mixture. Stir until fully combined.

      Once the mixture is well blended and holds together, use your hands to form small balls about the size of a tablespoon. Roll them gently to ensure they are compact.

        Place the energy balls on a baking sheet lined with parchment paper.

          Once all the mixture has been rolled into balls, refrigerate for at least 30 minutes to firm them up.

            After chilling, transfer the energy balls to an airtight container. They can be stored in the fridge for up to a week or in the freezer for longer freshness.
