2 ripe avocados

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, halved (or diced mozzarella)

1/4 cup fresh basil leaves, torn

2 tablespoons balsamic glaze

1 tablespoon extra virgin olive oil

Salt and pepper to taste

Cut the avocados in half lengthwise and remove the pits. If desired, scoop out a small portion of the avocado flesh to create a larger cavity for stuffing.

    In a mixing bowl, combine the halved cherry tomatoes, mozzarella balls, and torn basil leaves.

      Drizzle in the olive oil and balsamic glaze, then sprinkle with salt and pepper. Gently toss the mixture to coat the ingredients evenly.

        Spoon the Caprese filling evenly into the avocado halves, generously filling each avocado half.

          Drizzle a little more balsamic glaze on top of the stuffed avocados for extra flavor if desired.
