200g all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

3 large eggs

150ml olive oil

150g Greek yogurt

100g feta cheese, crumbled

100g sun-dried tomatoes, chopped

1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)

1 teaspoon salt

1/2 teaspoon black pepper

Instructions
 

Preheat your oven to 180°C (350°F) and grease a loaf pan or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and black pepper. Mix well to ensure there are no lumps.

      In another bowl, whisk together the eggs, olive oil, and Greek yogurt until smooth and well blended.

        Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix.

          Fold in the crumbled feta cheese, chopped sun-dried tomatoes, and fresh basil until evenly distributed.

            Pour the batter into the prepared loaf pan and smooth the top with a spatula.

              Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.

                Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
