1 medium head cauliflower, cut into florets

1 cup all-purpose flour

1 cup water

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

1 cup buffalo sauce (store-bought or homemade)

8 small corn tortillas

1 avocado, sliced

1 cup purple cabbage, finely shredded

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Preheat your Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Batter: In a mixing bowl, whisk together flour, water, garlic powder, smoked paprika, cumin, salt, and pepper until smooth.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing any excess batter to drip off before placing them on the baking sheet.

        Bake the Cauliflower: Bake the coated cauliflower in the preheated oven for about 20 minutes until they start to turn golden and crisp.

          Toss in Buffalo Sauce: Remove the baking sheet from the oven and drizzle the baked cauliflower with buffalo sauce. Toss gently to coat them evenly, then return them to the oven for an additional 10 minutes to bake off the sauce.

            Warm the Tortillas: While the cauliflower is baking, wrap the corn tortillas in foil and warm them in the oven for about 5 minutes or until soft.
