Ingredients

1 baguette, sliced diagonally into 1/2 inch pieces

1 cup sun-dried tomatoes, chopped (packed in oil)

1 cup fresh tomatoes, diced

¼ cup fresh basil leaves, julienned

2 cloves garlic, minced

1 tablespoon balsamic vinegar

4 tablespoons olive oil, divided

Salt and pepper to taste

Grated Parmesan cheese for garnish (optional)

Instructions

Prepare Bread: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet. Drizzle 2 tablespoons of olive oil over the slices, lightly brushing to coat them.

Toast the Bread: Bake the slices in the preheated oven for about 8-10 minutes or until they are golden and crispy. Remove and let cool slightly.

Make the Topping: In a mixing bowl, combine the chopped sun-dried tomatoes, diced fresh tomatoes, minced garlic, balsamic vinegar, and the remaining 2 tablespoons of olive oil. Season with salt and pepper, then gently fold in the julienned basil.

Build the Bruschetta: Spoon the tomato mixture generously onto the toasted baguette slices, ensuring each one gets an even share of the flavorful topping.

Serve: If desired, sprinkle grated Parmesan cheese on top of each bruschetta for an extra touch of flavor.
