6 small corn tortillas

4 large eggs

1/2 cup milk

1/2 cup grated cheddar cheese

1/2 cup cooked chorizo, crumbled (or black beans for a vegetarian option)

1/4 cup diced red onion

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Salt and pepper to taste

Salsa or hot sauce, for serving

Instructions
 

In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.

    In a non-stick skillet over medium heat, cook the chorizo for about 5 minutes until browned. If using black beans, skip this step and just warm them in the skillet for 2-3 minutes.

      Pour the egg mixture into the skillet with the chorizo. Cook, stirring gently, until the eggs are fully scrambled and just set, about 3-4 minutes.

        While the eggs are cooking, warm the corn tortillas on another skillet over medium heat for about 30 seconds on each side until pliable.

          Once the eggs are cooked, remove the skillet from the heat and stir in the grated cheddar cheese until melted.

            To assemble the tacos, place a generous spoonful of the egg and chorizo mixture onto each tortilla. Top with diced avocado, red onion, and cilantro.

              Serve the tacos with lime wedges and salsa or hot sauce on the side.
