2 slices of whole grain bread

1 large egg

1 avocado, sliced

2 slices of crispy bacon (or turkey bacon for a lighter option)

1 slice of sharp cheddar cheese

1 handful of baby spinach

1 tablespoon mayonnaise

1 teaspoon sriracha (adjust based on spice preference)

Salt and pepper to taste

Olive oil for frying

Instructions
 

Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and let it drain on paper towels.

    Prepare the Egg: In the same skillet, add a little olive oil if needed. Crack the egg into the skillet and cook sunny-side-up or to your preferred doneness. Season with salt and pepper to taste.

      Toast the Bread: While the egg is cooking, toast the slices of whole grain bread until golden brown (you can do this in a toaster or on a separate skillet).

        Mix the Sauce: In a small bowl, combine mayonnaise and sriracha. Mix well to create a spicy mayo.

          Assemble the Sandwich: On one slice of toasted bread, spread the spicy mayo mix evenly. Layer on the baby spinach, followed by the crispy bacon, sliced avocado, and finally the egg. Top with the cheddar cheese.

            Finish with the Second Slice: Place the second slice of toasted bread on top to complete the sandwich.

              Optional Melting: If you prefer melted cheese, place the assembled sandwich back in the skillet on low heat for about 2 minutes, covering it with a lid until the cheese melts.
