2 medium sweet potatoes, peeled and diced

1 bell pepper (any color), diced

1 small red onion, diced

2 cloves garlic, minced

4 large eggs

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (for topping)

Instructions
 

Begin by preparing the sweet potatoes. In a large skillet or frying pan, heat the olive oil over medium heat.

    Add the diced sweet potatoes to the skillet. Sprinkle with salt, pepper, smoked paprika, and ground cumin. Cook for about 10-12 minutes, stirring occasionally, until they are tender and slightly crispy on the edges.

      Add the diced red onion and bell pepper to the skillet with the sweet potatoes. Sauté for another 5-7 minutes until the vegetables are softened and fragrant.

        Stir in the minced garlic and cook for an additional 1-2 minutes until the garlic is fragrant.

          Make four small wells in the hash mixture and crack an egg into each well. Cover the skillet and cook for about 5-8 minutes (or until the eggs are cooked to your preference).

            Once the eggs are cooked, remove the skillet from heat. Taste the hash and adjust seasoning with additional salt and pepper as needed.
