1 can (15 oz) chickpeas, drained and rinsed

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1/2 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp ground coriander

1/4 tsp cayenne pepper

1/2 tsp salt

1/4 tsp black pepper

1/4 cup all-purpose flour (or chickpea flour for gluten-free)

1/2 tsp baking powder

Vegetable oil for frying

For the Tahini Sauce:

1/4 cup tahini

2 tablespoons lemon juice

1 clove garlic, minced

2-3 tablespoons water (adjust for desired consistency)

Salt to taste

Make the Falafel Mixture: In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne pepper, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.

    Shape the Falafel: Transfer the mixture to a bowl. Stir in the flour and baking powder until combined. Form small balls (about the size of a golf ball) and place them on a parchment-lined tray. Chill in the refrigerator for at least 30 minutes.

      Prepare the Tahini Sauce: In a small bowl, whisk together tahini, lemon juice, minced garlic, and water until smooth. Season with salt to taste. Adjust water to reach desired pourable consistency.

        Fry the Falafel: In a deep skillet, heat vegetable oil over medium heat. Fry the falafel balls in batches for about 3-4 minutes per side or until they are golden brown. Remove and drain on paper towels.

          Assemble the Bowl: In a large bowl, layer your choice of fresh vegetables such as mixed greens, diced cucumbers, halved cherry tomatoes, and shredded carrots. Top with the crispy falafel and drizzle with tahini sauce.

            Garnish and Serve: Add pickled red onions or a sprinkle of sumac for extra flavor if desired. Serve immediately for the best texture.
