1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or regular milk with 1 tablespoon vinegar)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

1 cup fresh blueberries (or frozen, thawed and drained)

1 teaspoon vanilla extract

Maple syrup and whipped cream for serving (optional)

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients. Stir gently until just combined; be careful not to overmix; it’s okay if the batter is slightly lumpy.

        Gently fold in the blueberries, ensuring they’re evenly distributed without smashing them.

          Heat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the bottom.

            Once the skillet is hot, pour 1/4 cup of batter for each pancake onto the skillet. Cook for about 2-3 minutes, or until bubbles form on the surface and the edges appear set.

              Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.
