Ingredients

2 cups fresh blackberries

1 cup granulated sugar, divided

1 teaspoon lemon juice

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ cup unsalted butter, melted

1 cup milk

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

Optional: vanilla ice cream for serving

Instructions

Preheat your oven to 350°F (175°C).

In a medium-sized mixing bowl, combine the fresh blackberries, ½ cup of sugar, and lemon juice. Gently toss to coat the berries and let them sit while you prepare the batter.

In another bowl, whisk together the flour, baking powder, salt, and ground cinnamon.

In a separate bowl, mix the melted butter, remaining ½ cup sugar, milk, and vanilla extract until well combined.

Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix; a few lumps are fine.

Pour the batter into a greased 9x13-inch baking dish, spreading it evenly across the bottom.

Spoon the blackberry mixture over the batter evenly. Do not stir; the berries will sink during baking.

Bake in the preheated oven for 35-40 minutes or until the top is golden brown and a toothpick inserted into the batter comes out clean.

Allow the cobbler to cool for about 10 minutes before serving.
