Ingredients

1 baguette (preferably Vietnamese or any crusty bread)

1 cup sliced cucumbers

1/2 cup pickled carrots (julienned)

1/2 cup pickled daikon (julienned)

1 cup cooked protein (chicken, tofu, pork, or beef)

1/4 cup fresh cilantro leaves

1 jalapeño, thinly sliced

2 tablespoons mayonnaise

1 tablespoon soy sauce

1 tablespoon sriracha or your favorite hot sauce

Salt and pepper to taste

Instructions

Prepare the Pickles: If you haven't done so already, pickle the carrots and daikon by mixing equal parts vinegar and sugar with a pinch of salt. Let them sit for at least 30 minutes to absorb the flavors, or ideally, a few hours.

Toast the Baguette: Preheat your oven to 375°F (190°C). Slice the baguette in half lengthwise and place it in the oven for about 5-6 minutes until crispy but not too hard.

Assemble the Sauce: In a small bowl, mix mayonnaise with soy sauce and sriracha for a spicy, flavorful spread. Adjust the heat according to your preference.

Layer the Ingredients: Spread the spicy mayonnaise mixture generously on both sides of the toasted baguette. Start by layering the cooked protein of your choice.

Add Fresh and Pickled Veggies: Add a layer of sliced cucumbers, pickled carrots, and daikon. Then, place fresh cilantro and jalapeño slices on top.

Season and Close: Lightly sprinkle with salt and pepper, then close the sandwich, pressing down gently to keep everything intact.

Slice and Serve: Cut the sandwich diagonally into halves or quarters for easy handling.

                Prep Time: 30 minutes | Total Time: 45 minutes | Servings: 2

                  - Presentation Tips: Serve on a wooden cutting board or in a basket lined with parchment paper, garnished with extra cilantro and lime wedges on the side for spritzing.
