Balsamic Tomato Chicken Skewers

1 pound chicken breast, cut into 1-inch cubes

1 cup cherry tomatoes

1/4 cup balsamic vinegar

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Skewers (wooden or metal)

Instructions
 

In a mixing bowl, whisk together the balsamic vinegar, olive oil, honey, garlic powder, onion powder, oregano, salt, and pepper until well combined. This will be your marinade.

    Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

      While the chicken marinates, soak wooden skewers in water for about 10-15 minutes if using, to prevent them from burning on the grill.

        Preheat your grill or grill pan over medium-high heat.

          Thread the marinated chicken cubes and cherry tomatoes alternately onto the skewers until all ingredients are used.

            Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks, and the tomatoes are slightly blistered.

              Remove from the grill and let them rest for a couple of minutes.

                Garnish with fresh basil leaves before serving.
