Balsamic Chicken

4 boneless, skinless chicken breasts

½ cup balsamic vinegar

¼ cup honey

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

2 cups fresh spinach (optional)

½ cup cherry tomatoes, halved (optional)

Instructions
 

In a small bowl, whisk together the balsamic vinegar, honey, olive oil, minced garlic, thyme, oregano, salt, and pepper until well combined. This will be your marinade/glaze.

    Place the chicken breasts in a ziplock bag or shallow dish and pour the marinade over them. Make sure the chicken is evenly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.

      Preheat your grill or a skillet over medium-high heat. If using a skillet, add a little olive oil to prevent sticking.

        Remove the chicken from the marinade, reserving the marinade for later use. Grill or cook the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F / 75°C).

          While the chicken is cooking, transfer the reserved marinade to a small saucepan. Bring it to a boil over medium heat and let it simmer for about 5-7 minutes, or until it reduces and thickens slightly. This will create a rich balsamic glaze.

            If using, add the fresh spinach and halved cherry tomatoes to the pan after the glaze has thickened and stir gently until the spinach wilts (about 1-2 minutes).

              Once the chicken is fully cooked, remove it from the heat and drizzle with the balsamic glaze. You can also serve the spinach and cherry tomato mixture alongside or over the chicken.
