200g pasta (fusilli or penne works best)

200g feta cheese

300g cherry tomatoes (halved)

3 cloves garlic (minced)

1/4 cup olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves (for garnish)

Zest of 1 lemon

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large baking dish, combine the halved cherry tomatoes, minced garlic, and dried oregano.

      Drizzle the olive oil over the tomato mixture, followed by salt, pepper, and red pepper flakes if using. Stir to coat everything evenly.

        Make a small well in the center of the tomato mixture and place the block of feta cheese inside.

          Sprinkle a little salt and pepper on top of the feta, then drizzle a bit more olive oil if desired.

            Bake in the preheated oven for about 25-30 minutes, until the tomatoes are blistered and the feta is golden and softened.

              While the feta and tomatoes are baking, cook the pasta according to package instructions in salted water until al dente. Drain and set aside.

                Once the feta and tomatoes are done, remove the dish from the oven and stir everything together to create a creamy sauce.

                  Add the cooked pasta to the baking dish and mix until coated in the sauce. Adjust seasoning if necessary.

                    Finish with lemon zest and garnish with fresh basil leaves just before serving.
