Ingredients

4 cod fillets (about 6 oz each)

3 tablespoons olive oil

3 cloves garlic, minced

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat your oven to 400°F (200°C) and lightly grease a baking dish with a bit of olive oil.

In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, paprika, salt, and pepper until well combined.

Place the cod fillets in the prepared baking dish, skin-side down if applicable.

Pour the garlic lemon mixture evenly over the cod fillets, ensuring each piece is well coated.

Bake the fish in the preheated oven for about 15-20 minutes, or until the cod flakes easily with a fork and is opaque in the center.

Once done, remove from the oven and garnish with freshly chopped parsley.

Serve hot with lemon wedges on the side for an extra zesty kick!
