6 large eggs

1 ripe avocado

2 tablespoons plain Greek yogurt

1 tablespoon Dijon mustard

1 teaspoon lime juice

Salt and pepper to taste

1/4 teaspoon cayenne pepper (optional)

Fresh cilantro or chives for garnish

Instructions
 

Begin by placing the eggs in a saucepan and covering them with water. Bring the water to a boil over medium heat.

    Once boiling, cover the pot, remove it from the heat, and let the eggs sit for 12-14 minutes.

      After the time is up, transfer the eggs to an ice bath (a bowl of cold water with ice) to cool them down quickly and make peeling easier. Let them sit for about 5-7 minutes.

        Peel the cooled eggs and cut them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl, leaving the whites intact.

          Add the avocado, Greek yogurt, Dijon mustard, lime juice, salt, pepper, and cayenne pepper (if using) to the bowl with the yolks.

            Mash everything together with a fork until you have a smooth and creamy mixture. Taste and adjust seasoning if needed.

              Spoon or pipe the avocado-yolk mixture back into the hollowed egg whites.

                Garnish each deviled egg with fresh cilantro or chives for added color and flavor.
