1 cup Arborio rice

4 cups vegetable broth

1 bunch asparagus, trimmed and cut into 1-inch pieces

1 small onion, finely chopped

2 cloves garlic, minced

1 cup freshly grated Parmesan cheese (or nutritional yeast for a vegan option)

2 tablespoons olive oil

2 tablespoons butter (or vegan butter)

Salt and pepper to taste

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

In a medium saucepan, heat the vegetable broth over low heat to keep it warm throughout the cooking process.

    In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

      Add the minced garlic and sauté for an additional 1 minute, being careful not to burn it.

        Stir in the Arborio rice and toast for 1-2 minutes, stirring frequently until the rice grains are well-coated with oil and slightly translucent.

          Begin adding the warm vegetable broth, one ladle at a time. Stir constantly and allow the rice to absorb the broth before adding the next ladle.

            After about 10 minutes of cooking, stir in the asparagus pieces and continue to add broth gradually. Cook the risotto for another 10-15 minutes until the rice is al dente and creamy.

              Once the rice is cooked to your desired consistency, remove the skillet from heat. Stir in the remaining tablespoon of butter, Parmesan cheese (or nutritional yeast), lemon zest, and season with salt and pepper to taste.

                Let the risotto sit for 2 minutes to thicken before serving.
