1 bunch of fresh asparagus, trimmed

4 cups romaine lettuce, chopped

1/2 cup grated Pecorino Romano cheese

1/4 cup homemade Caesar dressing (see below)

1/2 cup croutons (store-bought or homemade)

2 tablespoons lemon juice

Salt and pepper to taste

Optional: 1 hard-boiled egg, halved for garnish

Begin by boiling a pot of water. Once boiling, blanch the trimmed asparagus for about 2-3 minutes until bright green and tender but still crisp. Remove the asparagus and immediately transfer it to an ice bath to halt further cooking. Drain and pat dry after a few minutes.

    In a large salad bowl, combine the chopped romaine lettuce and blanched asparagus.

      Drizzle the homemade Caesar dressing over the salad blend and toss gently to coat all the ingredients evenly.

        Sprinkle the grated Pecorino Romano cheese over the salad and give it another toss.
