1 cup almond flour

1 cup shredded unsweetened coconut

1/2 cup maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup dark chocolate chips (dairy-free if desired)

1/4 cup whole almonds

Instructions
 

In a large mixing bowl, combine almond flour, shredded coconut, maple syrup, melted coconut oil, vanilla extract, and sea salt. Mix until all ingredients are well incorporated and your mixture is sticky.

    Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.

      Pour the almond-coconut mixture into the prepared baking dish. Using your hands or a spatula, press the mixture firmly and evenly into the bottom of the dish.

        Sprinkle whole almonds evenly over the top of the mixture, pressing them in gently.

          In a small microwave-safe bowl, melt the dark chocolate chips in 30-second increments, stirring between each interval until smooth.

            Pour the melted chocolate over the almond layer, spreading it evenly with a spatula.

              Place the bars in the refrigerator for at least 1 hour to set. Once set, lift the bars out of the dish using the parchment overhang and cut into squares or rectangles.

                Store the bars in an airtight container in the fridge for up to a week.
