Ingredients

1 cup all-purpose flour

2 tablespoons unsweetened cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon salt

2 tablespoons unsalted butter, softened

1/2 cup granulated sugar

2 large eggs

1/2 teaspoon vanilla extract

1/4 cup milk

1 cup almond cream (store-bought or homemade)

Powdered sugar for dusting

1/4 cup sliced almonds, toasted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare the Batter: In a medium bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.

Incorporate Eggs and Milk: Beat in the eggs, one at a time, followed by the vanilla extract and milk. Gradually add the dry ingredient mixture to the wet ingredients until just combined.

Spread the Batter: Pour the batter onto the prepared baking sheet, spreading it evenly into a rectangle about 1/4 inch thick.

Bake: Bake in the preheated oven for about 12-15 minutes or until the cake springs back when gently pressed in the center.

Cool and Roll: Once done, remove from the oven and let it cool in the pan for a few minutes. Carefully invert the cake onto a clean kitchen towel dusted with powdered sugar and gently peel off the parchment paper.

Add Almond Cream: Spread a layer of almond cream evenly over the surface of the cake, leaving a small border around the edges.

Roll the Cake: Starting from one edge, use the towel to assist you in rolling the cake tightly into a log. Wrap it in the towel and refrigerate for about 30 minutes to set.

Serve: Once chilled, remove from the refrigerator and place on a serving platter. Dust with additional powdered sugar and sprinkle toasted sliced almonds on top.

Slice and Enjoy: Slice the roll into 1-inch pieces and serve immediately.
