2 cups cooked jasmine or basmati rice

1/4 cup olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Optional: 1 avocado, sliced for topping

Prepare the Crispy Rice: In a large bowl, combine the cooked rice, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until the rice is evenly coated in the oil and spices.

    Air Fry the Rice: Preheat your air fryer to 375°F (190°C). Spread the rice mixture into a single layer in the air fryer basket (you may need to do this in batches). Air fry for 10-12 minutes or until the rice is golden and crispy, shaking the basket halfway through to ensure even cooking.

      Prepare the Veggies: While the rice is cooking, in a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, red bell pepper, red onion, and chopped cilantro.

        Mix the Dressing: In a small bowl, whisk together the lime juice, a pinch of salt, and a drizzle of olive oil. Adjust seasoning to taste.

          Combine the Salad: Once the rice is done and crispy, let it cool for a few minutes. Add the crispy rice to the bowl of fresh vegetables. Drizzle the lime dressing over the mixture and gently toss everything together until well combined.
