400g spaghetti

6 cloves garlic, thinly sliced

100ml extra-virgin olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt, to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon

50g grated Parmesan cheese (optional)

Cook the Pasta: In a large pot, bring water to a boil and add a generous amount of salt. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare the Oil: In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 2-3 minutes. Be careful not to let it burn as burnt garlic can turn bitter.

      Add Heat: Stir in the red pepper flakes and sauté for another 30 seconds to release their flavor.

        Combine Pasta and Sauce: Add the drained pasta to the skillet with the garlic oil. Toss to coat the spaghetti evenly with the oil. If the pasta seems dry, add a bit of the reserved pasta water to achieve the desired sauce consistency.
